2 c. quick cooking oats
2 c. flour
1 1/3 c. dark brown sugar
1 1/2 tsp. salt
1 tsp. cinnamon
1 c. butter (unsalted) or margarine
1 jar (27 oz.) Mince meat (with brandy)
Mix oats, flour, brown sugar, salt and cinnamon in a large bowl. Cut in softened butter until well blended.
Add half of the mixture into a buttered 13 x 9 x 2″ pan. Pat down until it is firmly packed.
Spread the mince meat directly from the jar over the bottom batter.
Sprinkle the remaining mixture evenly over the mince meat. Pat down lightly.
Cool in pan on wire rack. Cut into narrow bars and store in a covered container in the refrigerator.
Yield is approximately 4 dozen cookies
